Super Salad

1 Bunch of kale- chopped (remove the stems and ribs, and save them in a ziploc for juicing.)

Toss all of the below ingredients together and plate on top of chopped kale. Refrigerate leftovers.

1 Avocado

1 Tsp. Apple Cider Vinegar

1Tsp. Olive oil

2 Tbls. Pumpkin OR Sunflower seeds

8 Grape Tomatoes-cut in half

2 Tbls. Golden Raisins 

1 English Cucumber-sliced

1 Clove of garlic chopped 

Use light Italian or a vinegrette dressing if desired.
