   **Ingredients**
– 2 chicken breasts, boneless and skinless
– 1 tablespoon olive oil
– 3/4 leaves fresh oregano
– 1 whole clove chopped garlic 
– Salt and pepper, & paprika to taste
– 1 cup cooked quinoa or rice
– 1 cup cherry tomatoes, halved
– 1 cucumber, diced
– 1/2 red onion, thinly sliced
– 1/2 cup kalamata olives, pitted and halved
– 1/2 cup feta cheese, crumbled
– 1/4 cup fresh parsley, chopped
– 1 lemon, juiced
– Tzatziki sauce for serving (optional)

– **Instructions**:
1. Preheat the grill or a skillet over medium heat.
2. In a small bowl, combine olive oil, oregano, garlic, salt, and pepper, paprika. Coat the chicken breasts with this mixture.
3. Grill or cook the chicken on the skillet for about 6-7 minutes on each side or until it reaches an internal temperature of 165°F (75°C). Remove from heat and let it rest for a few minutes, then slice.
4. In serving bowls, layer quinoa or rice as the base.
5. Top with sliced grilled chicken, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
6. Drizzle with fresh lemon juice and sprinkle with chopped parsley.
